This seasonal favorite is so easy to make and takes no time at all to prepare.
  • 1 carton (32 ounces) low sodium chicken or vegetable broth
  • 1 Tbsp. sesame oil
  • 2 apples peeled, cored and cut into chunks
  • 1 onion diced
  • 2 packages pre-cut butternut squash (about 40 ounces)
  • 1 tsp. cinnamon
  • dash nutmeg
  1. In a saucepan, heat oil on medium heat and saut? onion and apple until onion is soft and translucent. Add broth, squash, cinnamon and nutmeg. Bring to a boil and simmer for 30 minutes or until squash is soft. Let cool and then transfer to a blender to puree. Reheat and serve.
