Squash Apple Soup

This seasonal favorite is so easy to make and takes no time at all to prepare.
Ingredients
- 1 carton (32 ounces) low sodium chicken or vegetable broth
- 1 Tbsp. sesame oil
- 2 apples peeled, cored and cut into chunks
- 1 onion diced
- 2 packages pre-cut butternut squash (about 40 ounces)
- 1 tsp. cinnamon
- dash nutmeg
Instructions
- In a saucepan, heat oil on medium heat and saut? onion and apple until onion is soft and translucent. Add broth, squash, cinnamon and nutmeg. Bring to a boil and simmer for 30 minutes or until squash is soft. Let cool and then transfer to a blender to puree. Reheat and serve.
