Fresh Baked Flax Bread

Ingredients
  • 1 ? cups almond flour
  • 2 Tbsp coconut flour
  • ? cup flax meal
  • ? tsp himalayan salt
  • 1 ? tsp baking soda
  • 5 eggs
  • ? cup unrefined virgin coconut oil, melted
  • 1 Tbsp raw honey
  • 1 Tbsp raw apple cider vinegar1 Tbsp flax seeds (optional)
Instructions
  1. Place flours, flax meal, salt and baking soda in a food processor. Pulse ingredients together until mixed. Add eggs, pulse. Then add oil, honey and apple cider vinegar and pulse again to mix. Be sure to scrape down sides with a spatula so mixture is all combined too.
  2. Spoon batter in greased loaf pan. Sprinkle flax seeds on top (optional) and bake 30 minutes. Place a small skewer in the middle. If it comes out clean, it?s done. Cool in pan then remove and serve. Keep tightly wrapped in fridge to maintain freshness or freeze and use as needed.
Notes

Variation: for a sweeter bread, add 2 Tbsp coconut flakes. Mix with first 5 ingredients.
