- 1 tablespoon grated fresh ginger root
- 2 garlic cloves, minced
- 1 teaspoon caraway seeds
- 1/4 to 1/2 teaspoon cayenne pepper, or to taste
- 1/4 teaspoon turmeric
- 1/4 teaspoon ground coriander
- 1/2 teaspoon garam masala (can substitute 1/4 tsp. each ground cloves and cinnamon)
- 1/2 teaspoon kosher or sea salt
- 2 medium-large chicken breasts
- 1/2 fresh lemon
- 1 tablespoon melted ghee or olive oil
- 2 medium-large boneless chicken breasts
- Stir together ginger, garlic, caraway, cayenne, turmeric, coriander, garam masala, and salt until combined.
- Rub into chicken breasts (let sit in fridge for 2-4 hours or overnight for enhanced flavor).
- Grill chicken for 14 minutes per side (less or more depending on the size). Use a thermometer – internal temperature should be 165 degrees.
White rice and peas are a nice addition to this meal.
1 cup white rice
2 cups water
Bring water to a boil, add rice and reduce heat to low. Cover and simmer for 10-12 minutes or until water is absorbed.
