Ingredients:
3 Tablespoons avocado or coconut oil
1 onion chopped
1/2 teaspoon salt
2 carrots chopped
3 celery ribs chopped
2 cloves garlic minced
1 Tablespoon cinnamon
1/2 teaspoon cardamom
1/2 teaspoon coriander
6 cups water
1 large sweet potato, diced into small pieces
2 cups rinsed red lentils
2 cups fresh or frozen kale
Method:
Add 3 tablespoons oil to a large stock pot and heat on medium-high.
When oil starts to shimmer, add onion and salt.
Cook until translucent for 3-4 minutes, stirring frequently.
Add carrots and celery and cook for 4-5 minutes.
Add garlic and continue cooking for 1-2 minutes.
Add spices, blend well cook for an additional minute, and stir frequently.
Add water, bring to a boil, add sweet potato and cook for 5 minutes.
Add lentils, and reduce heat to low.
Simmer for 20-30 minutes, or until sweet potatoes are cooked.
Add kale and cook for 3-5 minutes more.
Add salt and pepper to taste.
