In the Fall and Winter months our bodies need more warming foods as the weather gets colder. ?Eating root vegetables can have a warming effect on our bodies and prepare us for winter. ?And because they grow beneath the surface, root vegetables have a way of grounding us and making us feel like we have two feet firmly planted on the ground. ?Which is a nice benefit if you’ve been feeling a little scattered and spacey lately.
Try this recipe and warm yourself for the long winter ahead:
3 carrots
2 large beets
1 yellow onion
3 parsnips
Peel and cut vegetables into one inch chunks. ?Coat with olive oil and lightly sprinkle with sea salt. ?Put in a roasting pan and cook at 400 degrees for 40 to 50 minutes. ?Enjoy!
