Hummus and Veggie Stuffed Pita

When you’re too busy to make your lunch, the inevitable happens. You either skip it or eat out. Neither of these options is nearly as good as a home prepared meal. This pita sandwich is not only delicious, it’s nutritious and has plenty of protein to get you through the afternoon slump. Enjoy!
Ingredients
  • 1 whole wheat pita bread, halved (can also substitute gluten free pita)
  • 1/2 cup hummus
  • 1/3 cup lightly packed shredded Romaine lettuce, cabbage or baby spinach
  • 1/2 cup assorted raw vegetables (halved cherry tomatoes, shredded carrots, sliced cucumbers, chopped celery or avocados)
Instructions
  1. Spread half of the hummus inside each pita half then fill with lettuce and vegetables and serve.
