If you can’t get to someplace tropical, then eating something that reminds you of a favorite vacation spot is the next best thing. This tasty salsa is not only healthy, it’s a breeze to make.
Ingredients
- 3 Roma tomatoes, diced
- 1/2 small onion, diced
- 1 small jalape?o, de-seeded and diced (use less if you want less heat)
- 1 clove garlic, chopped
- 1-2 Tbsp. cilantro, finely chopped
- 1 Tbsp. lime juice
- salt and pepper to taste
Instructions
- Combine all ingredients and let sit in refrigerator for an hour or overnight to let the flavors blend. Use as a topping for fish, chicken or as an appetizer with blue corn chips.
