Enjoy the bounty of Fall with this delicious butternut squash soup.
Ingredients
  • 4 cups precut butternut squash
  • 3 green apples, peeled and sliced
  • dash nutmeg
  • 1/2 tsp. cinnamon
  • 4 cups low sodium chicken stock or broth
  • sea salt and pepper to taste
Instructions
  1. Place butternut squash, apples, chicken broth and spices in either a slow cooker (crock pot) or stock pot. Cover and cook on low until squash and apples are soft (about 2 – 4 hours). Cool. Puree in a blender. Return soup to slow cooker or pan and reheat. Enjoy!
