Baked Sweet Potato Fries

Sweet potato fries are a healthy alternative to regular french fries. They also satisfy sweet cravings naturally, are strongly anti-inflammatory, low in sodium, a good source of dietary fiber and a good source of Vitamin A, Vitamin C and Manganese.
Ingredients
  • 2 large sweet potatoes
  • 1/8 cup olive oil
  • fresh ground pepper
  • sea salt
Instructions
  1. Preheat oven to 450 degrees.
  2. Peel sweet potatoes and dry off with a paper towel (if the sweet potatoes are damp, the fries will be soggy). You can also leave the skin on if desired.
  3. Cut off the pointed end and then cut the sweet potato in half. Continue to cut into 1/4 or 1/2 inch wedges.
  4. Toss in a bowl with olive oil, salt and pepper. Fries should be glossy but not dripping in oil.
  5. Spread evenly on a baking sheet or stone. Make sure the pieces don’t touch (this helps them crisp up – otherwise they’ll be soggy).
  6. Bake for 15 minutes and then turn and bake an additional 10 minutes.
  7. Enjoy!
