Healthy Banana Bread

What’s great about this recipe is it reminds me of the banana bread I ate as a kid, but there’s no processed white sugar. We’ve come a long way baby!
Ingredients
- 3/4 cup ripe bananas (about 2)
- 3/4 cup unsweetened almond milk (can also use rice, hemp, etc.)
- 1/4 cup raw honey
- 1 1/2 cups whole wheat pastry flour (make sure it’s pastry)
- 3 Tbsp. finely ground flaxseed divided (2 + 1)
- 1 Tbsp. baking powder
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. himalayan or sea salt
Instructions
- Preheat oven to 350 degrees F. Grease and flour an 8-inch loaf pan with ghee or olive oil. In a large bowl, whisk together mashed bananas, milk and honey. Add flour, 2 Tbsp. flaxseed, baking powder, cinnamon and salt. Whisk again until combined. Spoon into pan and sprinkle remaining 1 Tbsp. flaxseed on top. Bake until thoroughly cooked, about 55 minutes. To test, insert toothpick or butter knife into center. It should come out clean. Let sit for five minutes and then loosen corners with a butter knife. Remove bread to cooling rack. Enjoy!
