Chickpea Mash

High protein breakfast option that tastes good and is easy to prepare. (adapted from Beachbody Ultimate Reset)
Ingredients
- 1 can or carton of chickpeas
- 2 tablespoons olive oil
- 1 tablespoon chopped parsley (fresh is best)
- himalayan salt to taste
- avocado slices (optional)
Instructions
- Heat chickpeas on stove top until hot. While heating, add olive oil to flat bottomed bowl. Strain chickpeas and add to bowl. Mash with a fork and then sprinkle liberally with parsley. Add salt to taste. Garnish with avocado slices (optional)
